From FF1-6, the characters were depicted in somewhat sketch like styles. I don't know who the artist is, but if you take a look at the Final Fantasy Origins and Anthology (PS1) covers, you'll see what I mean. For FF6, you can also look at the CG renders of Terra and Celes for a beauty comparison because that's about as detailed as you'll see them compared to their 16-bit counterparts

Tetsuya Nomura is the new age now. His most distinct style is strongly present in The World Ends With You (DS). He's used that style in parts of Kingdom Hearts, Crisis Core, FF7, 8, and 10.

Yoshitaka Amano is a legend, while I like his FF work and the sketches in the Vampire Hunter D novels I have to say the best work I've seen from him is probably the art in Sandman Dream Hunters.
