UPDATE: I decided to experiment a little as I wasn't convinced that my solution was completely satisfactory.
I used psardumper on the 5.01 OFW update to get the newer npinstaller_plugin.prx. Seeing as I am still able to download from the PS Store I can only assume the problem was with the way Dark Alex dumped the plugin for his earlier fix. So if you have problems downloading from the PS Store my advice is to dump the plugin yourself using Psardumper and the 5.01 OFW update as I believe the file is affected by the model number of the PSP it is dumped on.

I finally managed to fix the PSN Store frozen download problem on my PSP... I just used Psardumper to get the original npinstaller_plugin.prx from the 5.00 OFW update and used it to replace the one in the VSH/MODULE folder. I don't know if it's the sort of thing I'd recommend but it is working now without any problems (And I have a 8GB SanDisk MS)
